Beer Battered Snakehead & Watermelon Salad

Oh, hello, summertime! CCA Maryland wants to share another one of our favorite reasons to get outside this summer; to fire up the Traeger Grill and make some delicious eats to share with friends and family. Smoked Goat Cheese Start Traeger Pellet Grill on Smoke, lid open, until a fire is established (4-5 min). Close the lid and keep on the Smoke setting. Place the log of goat cheese in a small, foil-lined, oven-safe pan (cast irons work great) Place on the upper rack, lid closed for 15 min. Remove and allow to cool. Pro Tip: You can do this 2-3 days in advance. Wrap & refrigerate the cheese to create a stronger smokey flavor.

Heirloom Tomato & Watermelon Salad Slice or cube the watermelon and slice the tomatoes into wedges. Combine. Chiffonade the fresh herbs. Smear the softened smoked goat cheese across the plate. Stack the watermelon and tomato high and sprinkle herbs on top. Drizzle the olive oil over the plate and finish with fresh ground salt & pepper. Pro Tip: Let the smoked goat cheese get nice and soft before smearing it

Fried SweetWater Snakehead Heat oil to 365º Rinse, pat and season filets with salt, pepper & fish pepper flakes In a large mixing bowl, whisk the flour into the beer for 1-2 min or until a thick, creamy consistency is achieved. Season with salt & pepper. Dip each filet into the batter then place into oil one at a time (don’t crowd the frying pan/fryer) flipping once until both sides are golden brown. Remove from oil and place on a paper towel to drain. Serve hot with salad and lime wedge. and SweetWater Peach, Love & Happiness, of course.

Watermelon Salad Ingredients: 3 Cups Seedless Watermelon 3 Heirloom Tomatoes, medium to large 4 oz Smoked Goat Cheese 3-4 Leaves of Fresh Basil, chiffonade 6-8 Leaves of Fresh Mint, chiffonade 2 Tblsp EVOO Salt & Pepper to taste

SweetWater Beer Batter Ingredients: 2 Cup SweetWater Peach, Love & Happiness Berliner Weisse 2 Cup All-Purpose Flour 1 Tblsp Fish Pepper Flakes Salt & Pepper to taste 8 4-6 oz Snakehead Filets, careful to remove all pin bones 1-2 Large Limes (or Lemon), sliced into wedges 2 Qt Peanut Oil, for frying.
