Summer Grilling Series: Smoked Bluefish & All The Fixins

Oh, hello, summertime! CCA Maryland wants to share another one of our favorite reasons to get outside this summer; to fire up the Traeger Grill and make some delicious eats to share with friends and family. MISS GRACE’S SMOKED BLUEFISH RECIPE (We love this one!)

Local Tomato & Cucumber Salad Slice tomato into thick slices, and shingle them on a plate. Slice the cucumber thinly, lengthwise and bunch between the tomatoes. Slice the red onion thinly and stuff between the cucumber & tomatoes. Drizzle with EVOO and sprinkle with salt & pepper.

Smashed Red Potatoes with Bacon & Butter Boil potatoes for 10 minutes or until tender. On a non-stick baking sheet, smash potatoes with a fork. Add 2Tbsp of butter in flakes on top of potatoes. Broil for 10 minutes or until browned and crispy. Add cooked bacon. Season with salt & pepper.

Balance the smoke with a Cool dollop of Lemon & Dill Sour Cream Combine 8oz of sour cream with 1 Tbsp Lemon Juice and 3 sprigs of chopped dill.

Tomato & Cucumber Salad 1 Large Tomato 1 Medium Red Onion 1 Cucumber, peeled 2 Tbsp EVOO Salt & Pepper to taste

Smashed Red Potatoes 6 Medium Red Potatoes 3-4 Strips of Bacon 2 Tbsp Butter

Lemon Dill Sour Cream 8 oz Sour Cream 1 Tbsp Lemon Juice 3 Sprigs Fresh Dill
